Homemade mayonnaise

Homemade mayonnaise


"Homemade mayonnaise is so easy to make that once you have tried it you won't buy industrial mayonnaise ever again!"

 

Ingredients

  • 1 egg
  • 200 ml of light olive oil or seeds oil
  • 1 teaspoon of dijonnaise mustard
  • 3/5 ml of lemon juice
  • salt 
  • pepper

Tools

  • Minipimer
  • Tall measuring jug

Preparation 

  • Put all ingredients into a small measuring jug - i.e. 10cm diameter 
  • Insert the minipimer fully into the jug
  • Blend at slow speed moving slightly up and down until the liquid gets thick and the mayonnaise looks consistent and the oil is all absorbed
Tips
Remember, the egg needs to be at room temperature otherwise it simply won't work! The proportion of oil, lemon juice and mustard are all based on your taste. Try changing them each time until you find your own perfect mayonnaise. I use Berio light olive oil, but sunflower oil is fine too. Just don't use extra virgin olive oil, as it would make it very heavy.
