"I remember the days I boiled potatoes in water. Never cooked right, parts coming off, difficult to peel... then it came the pressure cooker"
Ingredients
- 3/4 medium sized potatoes
- water
- extra virgin olive oil
- salt
Tools
- Potato peeler
- Pressure cooker
Preparation
- Peel the potatoes
- Cut the potatoes in discs
- Lay the potatoes in the basket so that they are not stacked on top of each other
- Add half a glass of water to the bottom of the pressure cooker
- Insert the basket and close the lid
Cooking
- Close the valve and turn the hob to high heat
- When the valve starts whistling reduce the heat slightly and count 10/12 min (depending on how small the cuts are or how many potatoes)
- When the time elapsed, switch off, get the steam gradually out through the valve
- Open and check the potatoes (in the unlucky event that you where too hasty, put them back in and cook for another 3/5 minutes from when you hear the valve whistle)
- Let them cool down a bit and cut them in halves or quarters
- Put the potatoes in a bowl
- Add extra virgin olive oil and salt to taste
Tips
I often place a piece of fresh salmon on top and cook everything together for 15 minutes. Super easy! Either way I recommend making some homemade mayonnaise to eat with them. BTW, you can also use this method to then make mashed potatoes. It's faster than boiling them in water.
